چکیده
We studied the hygroscopic properties of gelatin from waste-products after processing common fresh-water fish species form Astrakhan region (skin, scales, bones, fins, and cartilage) as an object drying. The analysis thermodynamics internal mass transfer was carried out during interaction substance specified product with water. objects study were concentrates obtained by convective-radiation drying granules, previously foamed to a constant expansion ratio cooled gelatinization temperature. studies experimentally analytically using tensometric method Van Bamelen. For thermodynamic characteristics, classical Gibbs–Helmholtz equation used. On basis empirical data, sorption isotherms – functional dependences level water activity Aw on equilibrium moisture content temperature product. are S-shaped, typical for colloidal capillary-porous bodies, which is due foam structure curves can be conventionally subdivided into three zones, corresponding monomolecular polymolecular adsorption, structural, microcapillary, microcapillary moisture. Based under study, determined its various temperatures: Wg1 = 0.280 kg/kg T 283 K Wg2 0.301 303 K. threshold range states important point view rationalization modeling heat material dehydration. As result calculations equation, free, bound, energy well total specific thermal evaporation derived. It has been established that nature these samples generally consistent published data number materials biopolymer nature. These dependencies used in development dehydration processes design equipment production waste.

Sustainable Seafood Processing: Utilisation of Fish Gelatin
Usually gelatin manufacturer utilises mammalian sources as principle sources to produce collagen. The collagen is partially hydrolysed to generate gelatin. However, Muslims and Jews can’t consume gelatin from pork products because of their religion and culture reasons. On the other hand, potential safety issue for gelatin made from slaughtered beef processing byproducts will pose problems such ...
متن کاملEffect of Different Factors on the Quantity of Gelatin and Oil Extracted from Tuna Fish
Gelatin and oil from three species of tuna fish, Thunnus albacares (yellow-fin tuna), Thunnus tonggol (long-tail tuna), and Katsuwonus pelamis (skipjack tuna) were extracted to study the factors affecting yield. Factors studied included organ (fin or skin), catch location (Chah bahar, Bushehr, Bandar-e abbas), season (summer or winter) and species (the three species). To extract gelatin and oil...
متن کاملExtraction of gelatin from fish skins by high pressure treatment
High pressure, at 250 and 400 MPa, for 10 or 20 min, was applied at either of two stages: during pre-treatment in acid at 10 8C to facilitate destabilisation of acid labile crosslinks, or during extraction in water at 45 8C to accelerate collagen hydrolysis. The resulting gelatins were evaluated in terms of yield of extraction, molecular weight distribution by SDS-PAGE, and viscoelastic propert...
متن کاملA study on the production of gelatin from sturgeon fish skin
Gelatin was extracted from hydrolyses of collagen muscle bonds. Gelatin was of two types. Type A was obtained from acidic and type B from alkaline procedures. In the present study we used sturgeon fish skin to produce 25 samples of gelatin. Microbiological and chemical examinations were conducted on the gelatin samples. Based on the results obtained from the chemical examination, gelatin type A...
